Ingredients

  • Canned Chickpeas – $2.79
  • Cucumber – $.89
  • Bell Pepper – $1.25
  • Tomatoes – 12oz grape tomatoes – $3.99
  • Feta Cheese 6oz – $4.42
  • Hummus 8oz – $3.49
  • Quinoa 30oz – $6.19
  • Italian Seasoning
  • Salt & Pepper
  • 2 Tbs Olive Oil

Directions

  1. Cook Quinoa (see recipe page)
  2. mix together seasoning and 2 Tbs olive oil and add to Chickpeas, set aside
  3. Chop Vegatables into cubes
  4. Assemble ingredients in a bowl, add Hummus and Feta
  5. Mix, Season to taste, and enjoy

This recipe is a great lunch or dinner meal that will keep you full and functioning! The portion sizes may vary depending on how hungry you are or the amount of food you buy, but this is a great meal to store and keep on hand for the next day or to add to your meal prep regiment.
Depending on the amount of meat you get you can either store the rest in a freezer if you have one available to you or you can make it all at once and store in a fridge. If you make it all you will probably want to add more seasoning according to you serving size.

Create a wrap, encase in a flour tortilla and create a wrap, great with leftovers.
