Easy and filling rice bowl packed with protein and great flavors! Great for mealtime.
Ingredients
- 1/3 cup Jasmine Rice ~ $2.99 2lb
- 1/4 of a pack of Ground Turkey ~ $7.99 16oz
- 1/4 cup Frozen vegetables ~ $2.69 12oz
- Shredded cheese (as desired) ~ $3.49 7.5oz
- About 3 tsp of Taco seasoning ~ $1.79 for one pack
Directions
- A taco rice bowl is a simple, hearty meal that comes together in just a few steps. Start by making the rice: combine one part rice with two parts water, bring to a gentle boil, then cover and let it sit for 15–20 minutes until fluffy. Set the rice aside.
- In the same pot, cook ground turkey with taco seasoning, stirring occasionally until it’s broken up to your liking and fully cooked through. Remove and set aside.
- Next, add your vegetables to the pot with a splash of water, cover with a lid, and let them steam for a few minutes. Remove the lid and stir occasionally for about three more minutes.
- To finish, assemble your bowl with rice, seasoned turkey, and vegetables, then top with shredded cheese and enjoy
This recipe is a great lunch or dinner meal that will keep you full and functioning! The portion sizes may vary depending on how hungry you are or the amount of food you buy, but this is a great meal to store and keep on hand for the next day or to add to your meal prep regiment.
Depending on the amount of meat you get you can either store the rest in a freezer if you have one available to you or you can make it all at once and store in a fridge. If you make it all you will probably want to add more seasoning according to you serving size.

Substitutions
For vegetarians you can easily switch out the meat for things like garbanzo beans or tofu and just add the taco seasoning to those instead
You don’t have to stick to turkey either, many other types of meat or protein will suffice, the way you cook the different meats will just change.
